Strawberry Sangria Popsicles

Can we just talk about how cute these popsicle molds are? They’re RING POPS PEOPLE. The mold is from Tovolo and you need to get them. Especially if you have kids. Only, because I’m a grown-up and can do whatever I want now MOM, instead of the saccharin-sweet artificially flavored popsicles of my youth, I can fill it with a delicious fresh strawberry sangria. Even my mom agrees that these are better, even though I keep telling her she’s not the boss of me. (Just kidding mom. You know you are.)

 

 

Strawberry Sangria Popsicles

Makes 6 popsicles (At least in this mold it did)

 

1 cup prosecco

1 cup Riesling/Chardonnay

2 oz. Lillet

½ cup sliced strawberries (My strawberries were small and fit in the mold, chop it down more if you have bigger strawberries and need them to fit.)

½ cup soda

2 tbsp lemon juice (freshly squeezed, please!)

 

Combine all ingredients EXCEPT strawberries  into a large measuring cup with a spout. Stir to combine.

Place several strawberries into each mold, and pour the sangria into each one to top it off, leaving about 2mm room on the top for the sticks to go in. Place in the freezer for at least 4-6 hours until fully hardened. Run warm water over the bottom of the mold for a few seconds to release the pops.

 

The strawberries will infuse into the prosecco and wine while it’s setting up and then as you eat it you get those fruity bursts of strawberry as you go!
